In Nov 2023, Michelin-rated Jay Fai and famous Korean instant noodle brand Nong Shim collaborated to create a brand new tom yum flavoured ramen. It is available in two types, soup and stir fry (dry). One of my work friends visited Thailand recently, and gave me a packet of the Tom Yum Stir Fry Jay Fai instant noodles.

Who is Jay Fai
For those who are not familiar with the Thailand food scene, Jay Fai (real name Supinya Junsuta) is the chef and owner of a One Michelin Star restaurant, Raan Jay Fai. It is most well-known for their signature crab omelette.

The packet included:
- 1 noodle cake
- 1 packet of flakes
- 1 packet of soup base seasoning (not sure why its called soup when it’s a dry noodle)
- 1 packet tom yum paste
Jay Fai x Nong Shim Tom Yum Stir Fry Review
The noodles seem to be thinner than the standard Nong Shim ramen and I preferred this thinner version better. It is around the same size as the standard Shin Ramyun noodle cake.
The flakes packet included meat and cute fishcakes with the Shin Ramyun logo. Taste wise, it was delicious spicy tom yum noodles that’s different from the standard Mama tom yum flavour. Something about it made it feel more ‘refreshing’ as if there was lime added.
What surprised me most was the spice level. I wasn’t expecting this to be overly spicy as usually tom yum flavour is not spicy for me. However, this one felt almost like I was eating Samyang fire noodles and I was actually in pain but I couldn’t stop eating.
